Confetti Ham and Cheese Wraps

Southwest flavor's in the making with a creamy cheese and corn filling wrapped up with ham slices and flour tortillas.

Ingredients

  • 1 can (11 oz) Green Giant® Mexicorn® whole kernel corn with red and green peppers, drained
  • 1 cup shredded reduced-fat Cheddar cheese (4 oz)
  • ¼ cup fat-free mayonnaise or salad dressing
  • ¼ cup fat-free sour cream
  • 10 Old El Paso® flour tortillas for soft tacos and fajitas (6 inch)
  • 30 fresh spinach leaves
  • 10 slices fully cooked fat-free ham

Directions

  1. In medium bowl, mix corn, cheese, mayonnaise and sour cream.
  2. Top each tortilla with 3 spinach leaves and 1 slice ham. Spread each ham slice with 2 tablespoons of the corn mixture.
  3. Roll tortillas around filling. Serve immediately, or wrap individually and refrigerate.

Recipe Tip:

Success

Soften tortillas to make them easier to roll. Place 2 tortillas between dampened microwavable paper towels or plastic wrap and microwave on High 15 to 20 seconds.
