Egg Salad Sandwiches To Go

Pack an "eggstra" special sandwich for lunch tucked into a croissant or baked Pillsbury® crescent rolls.

Ingredients

  • 3 large eggs
  • 2 tablespoons mayonnaise or salad dressing
  • 1 tablespoon chopped pickle relish
  • 1 teaspoon Dijon mustard
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 6 fresh spinach leaves
  • 2 croissants, split
  • 2 green bell pepper rings, halved

Directions

  1. In 2-quart saucepan, place eggs in single layer; add enough cold water to cover eggs by 1 inch. Heat to boiling; remove from heat. Cover and let stand 15 minutes. Drain; rinse with cold water. Let stand in ice water 10 minutes.
  2. Peel eggs; cut lengthwise in half. Slip out yolks into medium bowl; reserve egg white halves. Mash yolks with fork. Stir in mayonnaise, relish, mustard, salt and pepper until well mixed. Chop egg whites; stir into yolk mixture. Refrigerate at least 30 minutes.
  3. Line bottom halves of croissants with spinach. Top each with egg salad and halved bell pepper rings. Cover with top halves of croissants.
