I have a nephew who has Celiac disease and cannot digest gluten.  He cannot eat wheat.  I have been experimenting with my own kids by substituing beans, bean flour, and oat flour instead of when flour.  It reduces the number of calories in the food and provides them with more vitamins, proteins, and fiber.  The great news is that there are quite a few recipes on the internet and most of the time my kids cannot tell.  It does change the texture sometimes, but my kids seem to like it.  I would encourage other parents to try some of these recipes.  They will help avoid obesity and keep your kids full longer than wheat flour will.  For the bean flour, I wash the beans and let them dry.  Then I grind them up in my blender.  For oat flour, I simply grind up the oat meal.

Can you even buy beans that have the Boxtops logo? Or how does this apply to Boxtops??

There are more and more people who have found out they have Celiac Disease or a wheat intolerance.  I eliminated wheat over a year ago along with sugar and lost 50 lbs. I feel so much better and am definitly healthier.


 You can still find Box Tops on products that are gluten free.  The Chex cereals and gluten free Biscquick are just a couple that I can think of off hand.  I do wish that more of the gluten free flours would be available in the large grocery stores like Walmart etc.
